Harvested from the gardens at Monticello.
Bath Cos is an 18th-century English variety of black-seeded Romaine lettuce.  The handsome, grayish-blue leaves, shaded with dark reddish brown, form a loose Romaine-type head.  In Field and Garden Vegetables of America (1865), Fearing Burr notes that this variety, also called Bath Green Cos and Coolings Leviathan, "has much merit as a hardy, winter, green sort".

Direct sow seed of Bath Cos Lettuce in late summer for a fall and winter crop.  The flavor of this lettuce is improved by both blanching the inner leaves and by a light frost; for blanching, grow until the outer leaves begin to fall, then bind the heads with twine for two weeks.  Approximately 125-150 seeds per packet.
