Wasail began as a spiced wine that resembled Roman recipes that survived the Middle Ages. It was a libation for the wealthy who could import the wine, fruit, sugar, and spices of ginger, cloves, cinnamon, allspice, nutmeg. When ale and cider replaced wine, wassail recipes varied according to means of each family.
