Coffee imported from the East and West Indies was Jefferson’s preferred variety. The cellar was stocked with unroasted beans, and small quantities of coffee were roasted and ground in the Monticello kitchen. Coffee was prepared according to the recipe of Adrien Petit, Jefferson’s French maître d’hotel served at breakfast, and likely after dinner.
