Because Jefferson’s gardens grew an extensive array of herbs and spices, it was not uncommon for the table at Monticello to feature spicy and otherwise richly seasoned foods. Mary Randolph, kinswoman to Jefferson, routinely calls for garlic in her recipes, many of which survive today.
